Rabbit liver Bruschettas

Preparation: 

Wash the liver thoroughly and drain it from the water. Chop 2 onions and 4 cloves of garlic and fry in olive oil or butter. Add anchovies with a little anchovy oil. Chop the capers and add them to the frying pan. Season with salt and pepper (less salt, because anchovies and capers are already salted). Chop the liver and add it to the pan. Turn the heat to high and fry well. Then add a little flour so that it sticks to homogenious consistency, a glass of wine and a glass of water. At the end, add a little chopped rosemary and cook for another 10 minutes. Leave the liver to cold and prepare the slices of bread (you can make them in the toaster).

Serve the rabbit liver Bruschettas on a plate, decorate them with paprika or jam.
