Minced rabbit meat croquette

Preparation: 

Rinse the rabbit meat under running water and dry it with a paper towel. Separate the meat from the bones and mince or chop it finely. Wash the onion, the parsley, the green onion and the garlic, peel, chop and add all this to the meat. Mix the minced meat with egg, ground black pepper and salt to get a homogenious consistent mass. Wetting our hands with water, we make the chops and roll them one by one in breadcrumbs and in a frying pan, fry them on both sides. Place the fried roasts to a tray and bake in the preheated oven for 30 minutes at 180 °C.

Garnish. Boil the Brussels sprouts in salted water for 5 minutes. Heat the crushed garlic in a frying pan for 1 minute to flavor the oil and then discard the garlic. Add the Brussels sprouts and the sweet corn and fry for another 5 minutes. Season with salt and pepper to taste.

Serve the minced rabbit meat croquette in a deep dish with Brussels sprouts and sweet corn. Decorate with arugula and flowers.
