Pancakes with rabbit liver
Preparation:
We wash the rabbit liver by changing the water a few times and then chop it finely. Peel the onion and the garlic and cut them into small cubes. Heat the oil in a frying pan and fry the liver with the onion and garlic for 20 minutes. Wash the parsley and finely chop it.
We make the batter for pancakes from eggs, flour, milk, oil and when it’s ready we add in the chopped greens. Fry the pancakes on both sides on a dry pan. Cut the pancakes lengthwise into 4 pieces. Put the filling on the edge of the pancake and roll it into a triangular shape.
Serve rabbit liver pancakes on a large plate and garnish with arugula on top.
