Salad with rabbit liver
Preparation:
Cherry tomatoes, lemon and mixed lettuce, wash and then dry all. Cut the tomatoes into two pieces. Cut the canned peaches into large slices. Wash the rabbit liver by changing the water several times. Fry the rabbit liver in a heated frying pan with the addition of butter until ready. Add honey, mix and caramelize the liver. Add brandy, salt, pepper to taste and cook for a few more minutes. Place the tomatoes and the mixed salad in a deep bowl, season it with olive oil, lemon juice, salt, pepper and mix it.
Serve the rabbit liver salad on a large plate. Top the salad with the caramelized liver and peach pieces. Decorate the salad with balsamic dressing.
