Rabbit meat broth
Preparation:
Wash, peel and slice the vegetables thinly. Wash the rabbit meat and boil in a saucepan of water, adding onion, bay leaf and peppercorns. Simmer the broth for an hour and a half on average fire, sometimes removing the foam.
Add the chopped vegetables and the thyme, salt and cook for another 5 minutes. Add the homemade noodles and cook for a few more minutes until ready. Sprinkle with finely chopped greens and turn off the heat.
Serve the rabbit meat broth in a deep dish, sprinkling freshly chopped parsley on top. Serve the broth with sour cream and slices of bread.
